Quick Summer Granola Bars

This energy blast granola bar is easy to make and can last a few weeks in your fridge. Grab a few bars for a hike, road trip or if you’re in need of a breakfast on the go. Once you make this recipe once, I can guarantee these bars will become a staple in your house!

Healthy Granola Bars
Serves 8 to 10


2 ¼ cup of rolled oats
½ cup chia seeds
½ cup pumpkin seeds
½ cup dried cranberries
½ cup of peanut butter
(or any nut butter you prefer)
½ cup of agave nectar

1) Mix oats, chia seeds, pumpkin seeds, and dried cranberries in large bowl.

2) Mix together the agave nectar and peaunt butter (you can add a pinch of salt here if you’d like, but it’s not necessary). Pour into oat mixture and combine. You’re looking for a sticky consistency, so if you need to add more agave nectar, do so here.

3) Line a shallow baking pan with foil. Pour the mixture in the pan and flatten it. Cover with another layer of foil and refrigerate for a minimum of six hours. Cut into bars and keep them indivually wrapped so they’re ready to go.
